When do you pick sunflower seeds?

I have a couple of sunflowers, some still to flower. Anyway one is already losing their petals, so the question is when do I harvest sunflower seeds? this is the first time that I have grown them.

HI Yvonne, I usually wait until the back of the flower is all brown and dry and the seeds loosen a little. watch the birds they know when they are ready;)

So putting a pillow case over them would be a good idea?

maybe a paper bag or something once they start to dry off, but a pillowslip would absorb moisture which you don't want.
