The Best Preserving Your Surplus Book You Know

Hey everyone,

I'm keen to invest in a produce preserving bible. I have been looking around online and found a few maybes:

The New Self-Sufficient Gardener, John Seymour

The Big Book of Preserving the Harvest, Carol W. Costenbader

The Encyclopedia of Country Living, Carla Emery

There are a whole host of options here: http://www.bountifulgardens.org/products.asp?dept=109

However, its hard to work out what is really good to buy. Does anyone have some recommendations or leads to look into? I'm interested in everything from how to store potatoes in a dark room in sand, to drying fruit leathers etc.

    WIC (a gardening project) ran a couple of preserving courses and came across an excellent manual through a Canadian nutritionist who was doing some voluntary work for us.  It can be downloaded for free.  The manual is called Produce Preservation Program: canning, freezing, drying, harvesting, cold storage.  There is a link to it from the WIC group here.

    The posting below it includes a handout of recommended reading - preserving books I've found useful and/or inspiring.

    If you are prepared to buy a DVD with broader scope, I recommend the BBC classic The Victorian Kitchen Garden which includes a number of traditional English storage techniques.  A book came out from the series but I don't know how detailed it is.

  • Hello Laine, a couple of good old fashioned basic preserving books that you might be able to pick up in second hand stores are Preserving a booklet published by the dept of university extension, otago university & home preservation of fruit & vegetables, agriculture & food research council afrc institute of food research from the HSMO. I've been making marmalade for longer than I care to admit using the pressure cooker recipe adapted from the latter book. I'll take a photo of the book covers and post them on my page.
