EASY BREAD RECIPES

Hi everyone,i am very concerned about all the extras going into bread these days, so i want to start making organic,bread with healthy grains for my family each day.I am not a great cook so i need a recipe thats fool proof,thanks Fi

  • Hi Jean,thanks so much for your recipe,my children and i are really looking forward to trying it this weekend,i will also be keen to no how you get on with your earth oven.We are very keen to have one,two really one at our house and one on part of our land that we have given to a co op garden.We are doing up a very cool old 70s caravan,so the co op kids (12) and growing can get out of the weather and we can have a cup of tea.We thought an earth oven would be a fun way for the kids to make there own pizza dinners.There are a few people that teach how to make them on the island so maybe we can hold a workshop here.Anyway it looks like another rainy day on Waiheke Island,its been a very wet winter here,but the good thing is the spring bulbs are starting to flower which is wonderful,kind regards Fi

    There are recipes where the dough rises overnight on the kitchen bench. I'll see if I can find one and post it for you, in the meantime this is a quick, tasty bread.

    450g strong flour. 270ml tepid water. 1 x satchet dry yeast. 1 tsp. salt. 2 tbs. olive oil.

    Combine all ingredients in a large bowl, mixing until a smooth dough is formed. Tip on to a lightly floured surface and knead 5-10mins. (10 mins is best, 5 if in a hurry) Place in an oiled bowl, cover with plastic wrap and leave to rise in a warm place for 1 & 1/2 hours (not too warm as it will kill the yeast).
    Preheat oven to 220C. Knock back dough (simply push it down 2-3 times) and then knead for another couple minutes. Shape into a flattish round and place on a lightly oiled baking tray, or a tray with a piece of baking paper on it. Cover with the plastic wrap and rest 10 mins or until or until dough starts to rise again, until about double in size. Bake for 30minutes or until crust is golden brown. Makes 1 loaf.

    Try varying the taste by adding chopped fresh herbs, rosemary is gorgeous; try half white flour, half wholemeal. Brush loaf over with milk and scatter with grains, or put 2 tbs. grains into dough. Hope this helps.
