Hello there, I am keen for some new recipes for beetroot, especially using it raw. Mostly I roast it and then use in a range of ways but I'm not roasting much right now so I'm looking for inspiration that is more personal than googling recipes! Many thanks in advance, Denise

i'm not growing beetroot but i recall mom (yes i'm american born and bred, been here 32yrs now tho, surely that qualifys me for something) just steaming the little ones with the greens that she got from thinning in a row, they were yummy. so simple, gotta love it.
This is a popular recipe for beetroot passed down from my Mum.
1 kilo peeled beetroot
400gms finely chopped onions
2 tsp thyme
pinch of chilli
Three quarters cup malt vinegar
quarter cup orange juice
quarter cup olive oil
1 cup sugar
salt & pepper
Boil all together for 2 hours. Chop beetroot into long, thin slices and return to the liquid.
... juice it? supposed to be fantastic for your liver... i always combine with carrot and/or apple to make it more palatable.

I am a beetrootaholic. I usually pickle it or juice it but many years ago I found a recipe for sweet and sour beetroot.
Sadly the recipe has long since gone but not so the memory of how lovely it was.
There is bound to be a recipe for it somewhere.

Thanks for your recipes, I have juiced beetroot, apple and carrot today and grated peeled raw beetroot into cooked couscous with grated carrot, chopped beetroot leaves and lemon juice, mint, garlic, salt and pepper (my version of a recipe from a friend) - simple but good!

I love grated fresh beetroot in salads. I make a simple dressing - olive oil, balsamic vinegar, garlic, little bit of honey, salt, pepper and fresh herbs like mint, and then I grate the beets into it and let it sit for 15 minutes.Then I pile it on top of lettuce leaves with broken feta and cucumber. Lots of fresh pepper and some rock salt on top. Stunning looking, yummy tasting.

I like my beets roasted, then I peel them and slice them. (You can freeze them once they're cooked)
Next I sautée the sliced beets with just little pepper and add Blue Cheese and Pine Nuts.
Serve it over mixed greens and I guarantee you'll love it!

i have been roasting my baby beets in the oven then peeling them and adding a couple of drops of balsamic vineager to them. I like a warm couscous salad with roasted pumpkin and beetroot, fetta, tomato, lettuce, spring onions and pecan nuts.
Also I know beetroot in a chocolate cake really makes a beautiful texture!
Hi denise try this one. Boil 2 apple sized beetroot untill tender.Cut into dice sized cubes and pour red balsamic vinegar over the cubes and leave to chill in fridge.Next cut into same sized cubes some good greek feta cheese,roughly same amount as beetroot.MIx beetroot and cheese together and spinkle with 2table spoons of toasted sesame seeds.Its the best .Good served with steak or lamb.

Judging by the comments of the people who sampled it, it was pretty good! :-) During the same programme he also made a beetroot & apple crumble, and beetroot icecream - you'll find the recipes for these under October on the above website.
