I have been vegetarian for more than 30 years and vegan for the last 10years. At present I am travelling in Europe. Most places I can find good food easily. Yesterday our picnic at marseille was wasa crisp bread, hummus, capsicum, rocket and carrots. I carry a fruit knife with me so I can cut up fresh veges. I lost my little chopping board somewhere but I use the lid of plastic container.
Couscous and quinoa are great and adding a jar of tomatoes with seasoning is a good basis for a meal.

I'm not a vegetarian, as such, either. However, I'm heading that way! The price of meat is too high for me most weeks and so I find myself having less and less - and I'm finding I'm quite happy (and more healthy!) with it that way. I have had several vegetarian cookbooks for many years, because although I used to eat meat regularly, I loved experimenting and serving extra special vegetable dishes. Those books are coming in more handy lately! I look forward to recipes shared on this thread.

Came across this really good quinoa recipe on Heidi Swanson's excellent 101 Cookbooks blog (

a splash of extra-virgin olive oil
a pinch of fine grain sea salt
1 shallot, minced
3 cups cooked quinoa (or brown rice, or other grain)
1 cup corn, fresh or frozen
1 1/2 cups kale, spinach or other hearty green, finely chopped
2 cups extra-firm tofu, browned in a skillet a bit
1/3 cup pesto
1/3 cup pumpkin seeds, toasted
1/4 cup roasted cherry tomatoes (or chopped sun-dried tomatoes)

In a big skillet or pot heat the olive oil and salt over medium-high heat. Stir in the shallot and cook for a minute or two. Stir in the quinoa and corn and cook until hot and sizzling. Stir in the kale and then the tofu, cooking until tofu is heated through. Remove the skillet from heat and stir in the pesto and pumpkin seeds. Mix well so the pesto is spread throughout. Turn everything out onto a platter and top with the cherry tomatoes.

How is everyone doing?  I would really love to get some activity on this page.  It's Vegetarian Month in the Northern Hemisphere.  As NZ, (where I live) is such a meat and dairy driven country, a "vegetarian Month" isn't considered.    Please post everything that inspires you (please keep it in theme though).  It will be great to get to know our members a bit more...Why you are a vegetarian/vegan?  Are you family vegetarian?  what are your favourite recipes?  Favourite Cafes/Restaurants etc...
