Here are a few notes I took during Saturday night’s talk by Joel Salatin from Polyface Farms in the US.

First up, farms are meant to be beautiful – you shouldn’t have to don hazardous protection suits before you enter a farm.

He described his pigerator system and how it allows pigs to fully express their pigness and to act as biological cleaners of the land.

He talked about how he uses biological resources (animals, plants, humans) to manage the terrain rather than chemicals and poor management methods currently favoured by many conventional growers.

Farms should be human intensive – there should be lots of people working the land.

He was very permaculture inclined! More...

Food is not a mechanical process, it is a biological process and we have lost touch with that fact.

nice! I've just been reading about him in The Omnivore's Dilemma, good to put a face to the name
