Does anyone have any ideas for preserving the small potatoes from your garden ... either freezing or canning
Just wondering why you don't want to keep them in a cool dark place as that works well.
I see they are frozen commercially, these are blanched and a chemical added to stop browning, could use lemon juice. See my blog on preserving if you are not to sure what blanching is. These are low acid so bottling them could be risky without canning equipment.
