Journey to the Goodlife: We made our own organic spelt pasta yesterday which we covered in our own homemade basil pesto. This has changed my perspective on pasta. My children love it. It is so easy and fun to make. But most of all... delicious and nutritious.
We inherited a pasta press, but you can simply just roll and cut to your desired shape. Here's the recipe:
-2 Cups Organic Spelt Flour
-3 True Free Range or Pasture Raised Eggs (at room temp)
-1 Pinch Salt
-2 Tbsp Olive Oil
Sift flour and salt together in large bowl
Beat eggs with oil in another bowl
Make a well in flour then stir in the eggs and oil. You can use a spoon, I choose to use my hands as it feels devine.
Finish mixing with hands then knead until mixture 'comes together'
Cover in cling wrap (or something non-plastic if you have it) and allow to rest for 20 minutes
