Love the photos of your garden. How is the mandela garden looking? My garden is full of weeds but somewhere among them I'm growing tomatoes, lettuces, capsicums - all the summer veg :-)

Oh and the other thing is to make sure the feta is completely dru before putting it into the brine in the 1st place. Otherwise it is sure to go slushi.

Hi Sarah, Yes I've had the same problem getting the balance between slushy and too salty. Currently I'm not putting it in brine and am even going easy on the salt. So far so good. Cheese is lasting 4 weeks with no mould. I haven't tried leaving it any longer. I've also had success with submerging it under olive oil. But it must be dry first.
