I've just finished bottling some beautiful plum and vanilla jam
1.5 kg plums (whatever variety) Can also add Peaches or nectarines - pitted
400ml water
1.25kg raw sugar
Juice of two lemons
1 1/2 tsp vanilla extract (the real stuff)
1/2 tsp vanilla bean seeds
Cook the plums and water together for about 20 mins
Add the sugar, and boil hard for about 10-15 mins, or till just about at the setting point
add lemon juice and vanilla - stir carefully so you don't get splashed
Process and jar up as per normal
