We have just taken over 14.5 acres of orchard (growing and selling figs and feijoas, with pans for cider apples) and grazing, with native bush replanting scheme.

Wish I had your problem of surplus figs :) Never had a the indulgence of a glut of figs although have fond childhood memories of eating them straight off a neighbour's tree in their Mangere garden competing with the wasps and bees. the last two links for pickled and preserved figs look particularly tasty.
Feijoa and date chutney is a favourite of mine, I'm sure that it would be equally delicious substituting dried figs for dates. Let me know if you want the recipe.
