Now is good, before they sprout. If you're rural, a pig will rid you of them if you need to get rid of them. I've got a really nice variety - not too knobbly and with a thin skin. I'm not very fond of them myself but the boys really like the sweet soup they make which is incredibly easy - just scrub, slice in the food processor and cook with a bit of water then salt, pepper and add some milk. They're supposed to be very good for diabetics - the sweetness isn't from a simple sugar but digests more slowly.
