Drying Perssimons

I bought a de-hydrator to dry fruit and vegge. Can anyone tell me if I can dry perssimons and if I need to 'treat' it before drying with lemon juice or blanching etc. (pre-treatment instruction as per booklet for the sunbeam I bought

  • I am also dehydrating some persimmons this year Jeffie and have been told by a reputable persimmon grower that the two different types of persimmons in New Zealand need to be dried at different times. The ones that are ripe when firm (non-astringent type) can be dried when they are fully coloured orange. The other ones, the astringent type that is soft when ripe, needs to be dried when fully orange, yet still firm, not yet soft. You peel them and slice across, or leave in halves if you wish. I would think the slices (which I will do - 1cm slices) would be easier to dehydrate and to me, easier to eat. Allow about 24 - 26 hours in the dehydrator, I am told. They become, apparently, like candy! YUM! I am definitely looking forward to experimenting with this...though it is HARD for me to NOT eat them raw/fresh!
    • hi Lynn, how did the drying on the persimmons go? I did a batch but not what I expected. I def cut it too thin, not very sweet just plain ol persimmon taste.

      Thanks for the helpful info. 24 hours in the dehydrator! My poor machine (bought 2nd hand) is already making a funny noice only after 16 hours of use LOL. I might have to invest in a new and better one:o)
