Does anyone make cheese and if so what have they found to be the best for them?

 

Made Paneer last and that was nice and easy, but finding so many different recipes around, its really nice fried.

    Lisa I did not know you could freeze feta, wow will try that.

    I have a good source of raw milk, but only get it every few weeks then try and make as much as I can that week, any tips on other ways to store soft cheese?

    • I cube feta I buy and put it in a jar with olive oil and chopped herbs such as oregano, basil, marjoram, rosemary and thyme, also some garlic and sometimes some sundried tomatoes, it keeps in the fridge for a few weeks and we use it a bit at a time as spread or salad additive or topping. yummy
    • we share similiar tastes Kali - our fridge also has a jar of cubed feta in olive oil, I usually add lots of fresh parsley, thyme, rosemary, freshly ground pepper and at least two fat cloves of crushed garlic. Spread on water crackers or in sandwiches, it seldom lasts more than two weeks and there's only two of us at home!
      Yummy Country Calendar's on telly, buffalo mozzarella.... drool :)
    • Do you keep in fridge or just in pantry?
    • I put it in the fridge, but we took some camping and it lasted well for a few days until it was all gone, not sure how long it would last, but did see something about garlic not being safe in oil for long periods, botulism risk apparently
  • Hi angie, i have only ever made yogurt cheese just setting yoghurt to drip through a cloth and adding herbs to make a soft spread
    i have friends with a housecow who make all their own cheese with their steady supply of milk and a friend i had years ago with a milking goat used to make their own feta.

      Feta is my next task, but things have been a bit hectic here.
      Storage of the soft cheese seems to be a big issue, just not sure how long they should last and should, brine, not brine, oil ?
