HI, thought would start a link for recipes (would love to get some of peoples favourites!

 

 

One thats been a hit at my place:

 

Blackbean Brownie

Ingredients

  • 1 (15.5 ounce) can black beans, rinsed and drained
  • 3 eggs
  • 3 tablespoons vegetable oil  - fat, coconut oil or olive
  • 1/4 cup cocoa powder
  • 1 pinch salt
  • 1 teaspoon vanilla extract
  • 3/4 cup white sugar  - rapadura or honey
  • 1 teaspoon instant coffee (optional)
  • 1/2 cup milk chocolate chips (optional)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 square baking dish.
  2. Combine the black beans, eggs, oil, cocoa powder, salt, vanilla extract, sugar, and instant coffee in a blender; blend until smooth; pour the mixture into the prepared baking dish. Sprinkle the chocolate chips over the top of the mixture.
  3. Bake in the preheated oven until the top is dry and the edges start to pull away from the sides of the pan, about 30 minutes.

  • I picked my apples from my baby trees today and made the most delish apple pie

    Crust

    3 cups of dessicated coconut
    3/4 cup of butter - melted

    Mix together, then line a pie dish with the coconut - reserve about a third for later.
    Bake at 150 degrees for 30 mins - or till golden brown

    Pie Filling

    Apples - about 1kg
    3/4 cup butter
    1 tsp cinnimon
    3TBS Agave syrup or splenda

    Cook all ingredients in a pot on the stove till the apple is soft.
    Pile into the crust

    Topping

    Take the remaining coconut and butter mixture, add 1/2 teaspoon of vanilla seeds and 2 TBS Agave Syrup - add about 4TBS of cream too - mix well.

    Top the pie with the topping mixture, then bake for 30 mins in a 150 degree oven

    Serve with whipped cream

    4 lbs Plums roadside collected

    3 cups Raw sugar

    6 trusses Elderberries

    Boiled as per usual until a little formed a skin. It set really well.

    You may find the recipe hit and miss, however good recipes come from this start I think.

    • Just edited it, Black bean brownie! - I tested it out on some firemen and they could not tell!
