I know that some game meat is sold to the public, but it seems that the hunters (who may have to be licenced or qualified in some way) take the carcasses to an approved processing plant to be inspected and processed according to certain guidelines.
I personally see nothing wrong in going hunting and then inviting friends around to be served some game meat. But things might get difficult if the powers that be learn that improperly processed meat has been sold.
I wonder how the various participants in the Hokitika Wild Foods Festival get around this problem. Perhaps all the meat served has been through a proper processing plant. Perhaps there is some special allowance for the event, but I doubt that this is the case.

Perhaps you could contact the New Zealand Food Safety Authority and see what they think. I imagine most folks in the organisation would have to stick to the strict rules.
