This is the very easy recipe ... It's medium spicy, but if you want it hot spicy, just double the pepper and the cayenne. I used black plums, and the sauce is delicious.
3kg stoned plums
3 cloves garlic
1 litre malt vinegar
2 large onions, chopped
1.5kg sugar
2 tbspn salt
1 tsp ginger
1 tsp ground cloves
1/2 tsp black or white pepper
1/4 tsp cayenne
put everything except the sugar into a large pot and bring to the boil, stirring. Add the sugar, stirring until boiling. Turn down and let simmer for half an hour until thick. Let cool a little and then run through the blender and pour into sterilised bottles
