Way to many courgettes, what to do with them all?

Hi there

 

Looking  for some different recipes to make using courgettes as  sick of the same old ones I have, am getting 6-10 a day at the moment  way too much even with friends and family getting them as well. Also beans, does anyone out there have like a pickle or spicy indian pickle recipe that you can use for beans, Thanks!!!

  • hello Rachel, hubby made stuffed courgettes last night, a maltese recipe. Really good cold too.

    Courgette bread is yum. Think jamie oliver has a recipe for it. Can't put my finger on mine at the mo. It's realy yum warm with loads of butter.

  • Hi, River Cottage Cookbook has a fabulous pasta sauce recipe for zucchini and other ways to use the glut. Slice zucchini and sweat them in olive oil with a couple of cloves of garlic slowly till soft. Add bacon if you want. Then add cream, egg yolk and lots of fresh grated parmesan and cook until thickish ( this is my edited version )
  •   we love this on crackers with cheese, I usually make a couple of batches a season.

     

    Courgette Sweet & sour Pickle

     1 kg. courgettes

    2 large onions

    2 Tbsp. plain salt

    3 cups sugar

    3 tsp tumeric

    2 tsp celery seeds  

    2 tsp mustard seeds

    2 cups white vinegar

    4 tbsp. flour

    slice courgettes and onions very finely,  sprinkle with salt and stand for 2 hrs. Rinse well

    bring remaining ingredients ( Not flour) to boil and stand 5 min. Add strained rinsed vegetablesand stand  for 2 hrs.

    Boil again for 5 min. Meanwhile make thickening with extra vinegar and flour. Stir into pickle and simmer till cooked and thick, approx 2 to 3 minutes

    Bottle and don't use for at least a fortnight.

  • hello Rachel, all my recipe books are packed up but I'm sure that if you google it, you'll find Sophie Grigson's courgette & mint salad which is really simple but yummy - I chargrill the courgettes instead of frying & toss with lemon juice, garlic, black pepper and serve chilled.
