Kefir wanted in Waihi

 Greetings all, My first experience with kefir was in the south of Spain. I used to take Bunny the mule into the Sierra Nevada and meet up with Jose the goat shepherd and buy 40 liters of fresh milk from goats milked by hand. Jose and his father hand milked 250 goats each day as well as taking them out to graze on the wild herbs and pasture in the mountains. This i then heated in stainless steel stockpot before placing it into 20 liter pottery jugs and adding the kefir. This when ready was divided into kefir for sale as is and one lot to be used for making cheese. I also had a wood fired sourdough bakery and used kefir in some of my bread products. Now back in NZ and feeling less than healthy i feel the need to get back into a more natural diet. Easier said than done as an invalid on a benefit! I believe kefir travels quite well in the post so if anyone could help me i will send you a self addressed and stamped envelope to make it easy.   • Just to add to my post! I also bought milk from another shepherd who grazed the same pastures and used milking machines, there was a definite difference to the quality and flavor of the milk milk and the goats milked by hand were in much better condition and seemed a lot happier.. obviously the natural way is by far the best!

  • That was interesting to hear about your experience with kefir. I have never heated the milk to make it though - I've not heard of anyone doing that before.

    • That may well have been due to some ignorance on my part. Its been so drilled into me as a chef to pasturise and use heated milk for making yogurt that i automatically assume the same goes for all dairy. However it did work well. I should do some more research! Regards, Rob.
