Lime syrup

OMG this is soo good! If you have a lime tree or know someone who does this is a good way of using up the plentiful harvest. Ours have gone yellow now so I am trying to use them up before they turn so I made this syrup: Peel the skin off about 10 limes and cover with 1l water. Simmer for about 5 minutes. Don't boil or it will get bitter. In another pot, or microwaveable jug if you prefer, place 500 ml water and 250gm sugar. Heat gently to dissolve the sugar. Stir as required. While all this heating is going on slice the limes in half and juice them into a jug that can hold around 2l...strain the warm lime peel juice into said jug and add warm sugar water too. Stir and enjoy as is or chill and drink cold. Lovely as a mixer with soda or tonic too (and some crushed ginger). Got to be good for you!
