HI, I am also looking for recipes to preserve my persimmons. I don't have a hydrator and been searching the web. only found a chutney recipe but want to do something else with them apart from that. Also not sure if I have a sweet or astringent tree. they are pretty yummy tho so maybe I have a sweet tree!

dehydrator was my first thinking, too. I ahve an easyflow and just let the astingent ones go very soft, put them through the mouli to rid the pulp of skin and seeds and put them onto the trays for fruit leather. It takes a night only and per tray I use up about 8-10 ripe persimmons. Yum!
And if you have excess non-astringent ones, peel and slice into 1cm thick rings, dry on low in dehydrator for ca 48 hours! They should still be leathery - yumyum.
I have never seen jam, wonder why? That was something i was going to try next.

If you have a dehydrater, dried persimmon is divine .A good way to use the really soft, ripe ones at the end of the season.
Just slice them and lay the slices in trays in a dehydrater ,then dry until leathery. Yummy.
